Makes 3 cups - serves 2-4 persons as a snack or side2 cups corn kernels (can be fresh, frozen or canned - wash and drain thoroughly if canned)2/3 cup pomegranate seeds1/4 cup chopped red onion1 jalapeno or small anaheim pepper, chopped (and seeded if you don’t want it very spicy)1/3 cup chopped fresh corianderJuice of one lime2 tablespoons tamarind chutney1 teaspoon chaat masala1 teaspoon cumin powder1/2 teaspoon chili powder1/4 teaspoon garam masala1. Mix all of the ingredients in a large bowl. Eat immediately or make up to one day in advance and refrigerate, bringing to room temperature before serving.

Juice of one lime
2 tablespoons tamarind chutney
1 teaspoon chaat masala
1 teaspoon cumin powder
1/2 teaspoon chili powder
1/4 teaspoon garam masala

1. Mix all of the ingredients in a large bowl. Eat immediately or make up to one day in advance and refrigerate, bringing to room temperature before serving.
