Evil Witch Halloween Finger Cookies

My cousin, Nicole, is always baking something creative in her kitchen. I recently saw this photo of some Halloween themed cookies and just had to get the recipe. 

This is probably the simplest, cheapest way to make something creative and “creepy” for a Halloween party this season…or you can make them just because they’re cool (and little boys love them). I guarantee you will have all the ingredients in your pantry. 

Yesterday, our little family of four started our morning by watching a Liverpool soccer match then came home and carved some pumpkins, hung out with the neighbors and topped it off with these cookies. All that with the amazing Colorado Fall weather and it was a perfect day! Now go eat some fingers!

 

Nicole’s finger cookies

  • 1 cup unsalted Butter, room temp
  • 1 cup plus 2 Tbs Powdered Sugar, sifted to remove lumps
  • 1 Egg
  • 1 1/2 tsp Vanilla
  • 2 3/4 cups Flour
  • 1 tsp Baking Powder
  • 1/2 tsp salt
  • Slice Almonds
  • Seedless Raspberry Jam (optional)

In a large bowl, cream butter and sugar. Add egg and vanilla mixing until smooth. Sift together flour, baking powder and salt then add to the butter mixture, beating on a low speed. Cover the dough in plastic wrap and refrigerate for 30 minutes. 

Dough should look about like this

Preheat Oven 325

Roll 1 tablespoon of dough into a finger shape. They don’t have to be perfect. If the dough gets too sticky, place it in the refrigerator for another 15 minutes. Press
